1)preheat the oven to 220ยฐC and start to boil a pan of water
2)in a big bowl mix oil, chilli powder. Crushed chilies and Cajun just enough to coat some chopped up tofu
3)once the tofu has been coated place on a baking tray and put in the oven with a 5 min timer (flip the tofu every 5 min)
4)in the same bowl with any extra oil and spices and black or kidney beans and sweet corn
5)heat a pan with a tiny bit of oil and at this point your water should be boiling so add rice
6)once oil is hot add beans and sweet corn to the pan
7)chop up any herb (I use mint) mix with fresh lime juice
8)finish cooking, plate up and serve

Honestly this is such an easy recipe but itโ€™s amazing especially with the mint an lime as a contrasting flavor ๐Ÿ’š
