Hearty Mushroom Bourguignon

  1. Heat the olive oil in a large pot over medium heat. Add the onions and cook until they become translucent, about 5 minutes. Add the garlic and cook for an additional minute.
  2. Add the carrots and celery to the pot and cook for 5 mins until they begin to soften.
  3. Add the mushrooms to the pot and cook until they start to release their juices, about 10 minutes.
  4. Stir in the tomato paste and flour, ensuring that the vegetables are well coated.
  5. Pour in the red wine and vegetable broth, stirring to combine. Add the bay leaves and thyme, then season with salt and pepper.
  6. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let it simmer for 10 minutes, allowing the flavours to meld and the sauce to thicken.
  7. Once the Mushroom Bourguignon has thickened to your desired consistency, remove the bay leaves and adjust the seasoning if needed.
  8. To serve, garnish with fresh parsley and accompany with your choice of side dish, such as mashed potatoes, rice, or crusty bread.
