This super quick and delicious Tofu Satay Noodle recipe is a great dish for when you need to make lunch in a pinch or when you have minimal ingredients left in the fridge at the end of the week! Sweet, savour and spicy satay sauce with protein packet tofu served with noodles of your choice!

Ingredients
-1 cup vegetables of your choice (such as bell peppers, broccoli, snap peas, carrots, anything!)
- 1/2 block firm tofu, drained and cubed
For the satay sauce:
- 2 tablespoons soy sauce or tamari
- 1 tablespoon maple syrup or agave nectar
- 1 teaspoon sesame oil (optional)
- 1 tbs peanut butter
- 1 tbs Plant milk
- 1 tsp garlic, minced or powder
- 1 tsp grated ginger of ginger powder
- 1 tsp curry powder
- 150g or 1 packet rice noodles
Instructions
- Drain and cut your tofu then stick it in the air fryer or oven for 7-10 minutes as you prep and cook your veg
- Slice up your veg of choice and fry over a medium heat with a little oil in a non-stick pan until half cooked.
- In a small bowl, whisk together the soy sauce or tamari, maple syrup or agave nectar, sesame oil (if using), minced garlic, and grated ginger (if using).
- Pour the sauce over the vegetables so they simmer until tender
- 6. In a bowl mix together the peanut butter, curry powder and plant milk until smooth and add to your pan.
- Add your cooked rice noodles and cooked tofu, stir, then cover the pan until the noodles are hot.
- The sauce should thicken and cover the noodles and vegetables in a smooth, thick satay sauce.
- Serve whilst hot and garnish with (optional) peanuts, coriander and fresh lime
- Enjoy!
Tips
- You can toss your uncooked tofu in some corn flour before cooking for a crispier texture
- You can always add some fresh or powdered chilli if you prefer a spicier sauce
- Coriander goes perfectly as a garnish for this dish
